If an apple a day keeps the doctor away, then these apple flapjack energy balls are the things to keep away that afternoon slump. Bitesize and plastic free.
These little bitesize treats are a good pick during the autumnal season due to the use of apple and cinnamon (my favourite flavour combo during this period). They are easy to make and can easily be scaled up if you have a need to make more than 10 at a time (if you are sharing with others). The size of these apple flapjack energy balls fit perfectly into the Elephant Box seal and go snack pots but of course you can always adjust the size if you wish it will just alter the yield.

Oats make up the bulk of these energy balls and have multiple benefits from a health point of view. I’m no nutritionist but some of the basic benefits you can find when searching is that oats can help you stay fuller for longer so can help stop snacking, and therefore given you a slow release of energy so can be good in the morning or as a lunch time / afternoon snack to keep you going until your evening meal.
How to Purchase Ingredients to be Conscious to the Planet
Through just making these energy balls, you will be reducing your plastic consumption due to the plastic packets that shop bought energy balls tend to come in.
Spices, seeds and oats are common items that can be purchased at zero waste shops, just take along any small jars that you have a fill away.
Dried fruit selections can vary between zero waste shops. Both of my local shops stock pitted dates, but only one has apple rings (they do however stock mixed dried fruit which the other doesn’t) so this either gives you the opportunity to support a couple of local businesses to get the ingredients. The spiced apple butter I use within this recipe, is my own recipe which you can find here. It is a good way to use up spare apples or a way to use up a windfall, just cut around the not so good parts. You will have plenty left to then use up in other recipes.

- Teaspoon

Apple Flapjack Energy Balls
Equipment
- Food Processor or Mini Food Processor
- Tablespoon
- Teaspoon
- Baking Dish
Ingredients
- 100 g Oats
- 50 g Pitted Dates
- 1 Tablespoon Sunflower Seeds
- 1 Teaspoon Chia Seeds
- 1 Teaspoon Cinnamon
- 50 g Spiced Apple Butter
- 30 g Apple Rings
- 1 Teaspoon water
Instructions
- Add the oats, seeds, cinnamon, spiced apple butter into the food processor
- Roughly chop the pitted dates and apple rings into the food processor
- Blitz together
- Add in the teaspoon of water and blitz again
- Tip the mixture into a dish
- Take portions of the mixture and roll into squash size balls
- Space out the balls in the dish and pop in the fridge for 30-60 minutes to firm up
- After this you can pop in an airtight lidded container to store in the fridge until needed
