My favourite way of dividing batter, whether for loaf cakes or cupcakes, is to use ice cream scoops. They allow you to get an equal amount consistently. These can be especially handy when looking to create a marble effect in cakes. You can swap between batters knowing that you will be able to get the same amount each time.

Presenting your Chocolate Almond Mini Loaf Cakes for Afternoon Tea
Depending on the size of your afternoon tea, you may be happy to serve the loaves whole. This allows your guest to enjoy it in their own way. I would perhaps suggest slicing the loaves up so that guest can have as much or as little as they want, without feeling as if they are wasting a cake. I tend to cut this size of mini loaf cake into 5 slices.

Ingredients
Chocolate Sponge
- 100 g Caster Sugar
- 100 g Butter / Plant Butter / Margarine
- 2 Eggs
- 90 g Self Raising Flour
- 10 g Cocoa Powder
Almond Sponge
- 100 g Caster Sugar
- 100 g Butter / Plant Butter / Margarine
- 2 Eggs
- ½ Teaspoon Almond Extract
- 90 g Self Raising Flour
- 10 g Ground Almonds
Instructions
- Preheat the oven to 170 degrees.
- To make the chocolate sponge, cream together the butter and sugar until pale and fluffy.
- Add in the eggs, one at a time, beating well after each addition.
- Add in the flour and cocoa powder along with a teaspoon of boiling water, and fold through to incorporate.
- Set aside while you make the almond sponge.
- Cream together the butter and sugar.
- Add in the almond extract along with the eggs, beating well.
- Add in the flour and ground almonds and fold through to combine.
- Divide the batter between the mini loaf mould alternating between the chocolate and almond batter, so that you have 2 lots of almond and chocolate per mould.
- Spread the batter to the edges and then using a skewer swirl the batters together.
- Place the silicone mould on a baking sheet and then bake in the middle of the oven for 25 minutes until a skewer comes out clean and the tops are springy to the touch.
- Allow to cool in the mould for 5 minutes and then carefully turn out to allow them to cool completely.
- Store in a cake tin or airtight container.
